Pac-Man Glitch
Enter the escape-tunnel and quickly move up and down while in the tunnel. Go down as your last move and Pac-Man will "wipe" into the screen. He can now move up and down in this vertical plane through the walls, but not sideways. This isn't useful, but it's definitely different.

Pac-Man Infinite Lives
For infinite lives, eat one ghost on board 1, 2 ghosts on board 2, 3 ghosts on board 3, and finally 4 on board 4. After you've done this, press Up, Down, Up and die. You'll now have infinite lives.
