When riding the BMX bike on the dirt track, here are the moves you can do:

California Games Really High Score in BMX
If you have a turbo controller, press and hold SELECT + JUMP. You will tend to rack up quite a score this way.

California Games Quick Stop (BMX)
To stop instantly in the BMX portion of the game, simply hit SELECT instead of B for brakes.

To make your bike go nowhere fast, just hold SELECT while you're jamming on the accelerator.
